Recipe of Dumplings with speck


Cook the onion with some oil into a pan at medium heat until it starts sizzling. In a bowl put the bread, speck cut in cubes, the crumbled sausage, onion, milk, eggs and nutmeg. Stir to blend and leave for about 1 hour. Add the flour and form the dumplings. Boil in salted water for about 15 minutes. If the dumplings are too soft add more flour, if too hard add some milk.

  • 350 g day-old bread cut in cubes
  • 100 g speck (or bacon)
  • 100 g fresh sausage
  • ½ onion, finely chopped
  • 2 - 3 eggs
  • ¼ l milk
  • 2 spoons flour
  • 2 spoons chopped parsley
