Recipe of Tripe and beans


Rinse well and cook the tripe for about one hour. Rinse, let cool and cut into pieces. Cut the onions and brown them in a pot with some oil. Cut and add the carrots and celery, sauté for about 10 minutes, then add the wine. Add the tripe, beans, salt, pepper and chopped parsley and cook for about one hour.
