The Strada dei Formaggi delle Dolomiti winds its way through three legendary lands of Trentino: Val di Fassa, Val di Fiemme and Primiero. Through this project, many local producers have committed to promoting the excellent and flavourful dairy products of an area with a long‑standing cheese‑making tradition. To safeguard product quality, the cheeses from these valleys have been selected to be part of two Slow Food Convivia: the one of the Fiemme and Fassa Valleys and the one of Feltrino and Primiero.
In Val di Fassa, the heart of Ladin culture, visitors can taste renowned cheeses such as Cher de Fascia, the famous Puzzone di Moena, and the Nostrano di Fassa from Campitello.
In Val di Fiemme, you can try Dolomiti, Fontàl, Valfiemme, as well as goat ricotta and the well‑known Caprino di Cavalese, which pairs beautifully with the sweet local honey produced in these valleys.
Crossing Passo Rolle, you enter the territory of the Paneveggio – Pale di San Martino Nature Park, eventually reaching Primiero, bordering the Province of Belluno in Veneto. Here, the cheeses to try include the Nostrani, fresh and smoked ricotta, Tosèla, and of course the traditional butter known as Botiro di Primiero di Malga — a true essence of mountain flavour and the pristine green landscapes of the Vanoi Valley.
