The Apple and Flavours Route of the Non and Sole Valleys is the true highlight of north‑western Trentino. Endless expanses of apple orchards give this land of lakes, castles, gardens, and canyons a unique charm and fragrance.
The Val di Non apples are the symbol of the area and, in 2003, the Renetta Canada, Golden Delicious, and Red Delicious varieties received the prestigious PDO certification. Newer varieties such as Gala and Fuji grow alongside ancient local cultivars like Napoleon, Champagne, Bella di Bosco, Palmandor, and Gravenstein.
With its long tradition of apple cultivation, this region celebrates its beloved fruit through delicious dishes and traditional desserts made with apples. A classic example is apple strudel, but many restaurants along the Apple and Flavours Route offer entire menus dedicated to apple‑based recipes. From these fruits come excellent juices, health‑boosting vinegars, refined balsamic vinegar, cider, jams, mousses, and even spirits.
The Val di Non–Val di Sole area is also home to Groppello di Revò, a ruby‑red wine produced along Lake Santa Giustina, from which an excellent distillate is also made; the smoked Mortandèla of Val di Non, an artisanal cured meat; and, of course, the cheeses produced in the alpine pastures and mountain huts of both valleys, including Trentingrana PDO, Casolèt, and Nostrano del Casel.
