Combine the flour and butter to make a dough that should have some crumbs about the size of peas. Now make a well in the middle of the pastry, add the salt and a little water, work everything very quickly and form a ball, which you will let rest in the cold for 30 minutes.
Roll it out with a rolling pin and line a baking dish that has already been buttered, taking care to leave the edges high. Boil the asparagus until three-quarters cooked, using the most tender part, cut into small pieces.
Flavor them in a pan with the knob of butter and arrange them on the shortcrust pastry. Separately, prepare a mixture with the eggs, salt and grated Parmesan, the nutmeg and the ham cut into strips. Pour the mixture over the asparagus and bake in a hot oven (180°) for about 45 minutes.
