A living ecosystem
At Naturhotel Miraval, nature isn’t just a backdrop – it's the main character. The surrounding area is a vibrant ecosystem: sheep, goats, calves, pigs, ducks, and hens live in harmony with the seasons, between stables, mountain pastures, and a small lake with a sunny nesting area. In winter, Walter, the host, cares for the animals on-site, while in summer they move to the alpine pastures: sheep to Zösen Alm in Lappago, and goats and calves to Montassilone Alm. Each season brings new life and renewed energy.
A kitchen in harmony with nature
The same philosophy extends to the kitchen, where dishes are made from natural, seasonal ingredients, many of them grown locally or sourced from nearby producers. Fresh mountain water and high-quality raw materials result in specialties like nettle spätzle, watercress cream soup, and chestnut mousse – pure flavors born from simplicity and care.
Natural comfort and conscious choices
Each room at the hotel is designed for comfort in the most natural way possible. Beds, pillows, and fabrics are made from natural materials, eco-friendly detergents are used for cleaning, and laundry is dried in the open air. Even the smallest details matter: no single-use plastics and paper-only packed lunches.
Clean energy and organic farming
Since 2011, the hotel has been heated using a wood chip heating system, powered by recycled wood scraps – a renewable, low-impact energy source. The surrounding agriculture is entirely natural: no chemical fertilizers, just traditional methods that support the blooming meadows of Montassilone. Animals are raised without additives, and pigs are fed with organic kitchen waste.
