Ricetta della vellutata di cavolfiore

  • 2 cipolle
  • 1 carota
  • Prezzemolo
  • 3 gambi di sedano
  • 1 patata
  • 500 gr. di cavolfiore
  • 20 gr. di farina di riso
  • 2 mazzetti di rucola
  • Zenzero fresco
  • Sale marino
  • Olio extravergine
  • Pepe nero


Preparare con cipolla, carota, patata, sedano, prezzemolo e acqua salata un brodo vegetale, facendo lessare il tutto per 1 ora circa. Fare poi rosolare la cipolla in una pentola ed aggiungere il cavolo tagliato sottile. Fare cuocere per 5 minuti e poi aggiungere 20 gr di farina di riso e 1 litro circa di brodo filtrato. Mescolare bene, facendo attenzione che la farina non faccia grumi e lasciare cuocere per 20 minuti. Poi frullare tutto, compresa la patata lessa, con un mixer. La vellutata è pronta e si può servire con un po' di rucola fresca tritata sottile e una spolverata di zenzero.
