Ricetta del tortino di asparagi al prosciutto di Praga

Ingredients

Per la pasta

  • 200 gr farina
  • 150 gr burro
  • Sale
  • Poca acqua fredda

Per il ripieno

  • 1 kg asparagi
  • 3 uova
  • 50 gr prosciutto cotto affumicato Praga
  • 1 noce di burro
  • 30 gr parmigiano grattugiato
  • Noce moscata

Directions

Con farina e burro preparate un impasto che dovrà risultare con un poco di briciole grandi come dei piselli. Fate ora un buco in mezzo alla pasta, mettetevi il sale e poca acqua, lavorate tutto molto velocemente e formate una palla, che lascerete riposare per 30 minuti al freddo. Spianatela col matterello e foderate una teglia da forno già imburrata, avendo cura di lasciare i bordi alti. Avrete già fatto lessare a ¾ di cottura gli asparagi, di cui userete la parte più tenera, tagliata a pezzetti. Insaporiteli in una padella con la noce di burro e disponeteli sulla pasta brisèe. A parte preparate un composto on le uova, il sale ed il parmigiano grattugiato, la noce moscata ed il prosciutto tagliato a striscioline. Versate il composto sugli asparagi ed infornate a forno caldo (180°) per circa 45 minuti.
