Ricetta dello stinco di maiale al forno

  • Stinco di maiale
  • Cipolle
  • Carote
  • Sedano
  • Rosmarino
  • Olio di semi
  • Vino bianco
  • Brodo di carne
  • Sale
  • Pepe


In un tegame basso fare un fondo di cipolle, carote, sedano e lasciar rosolare. In una pentola a parte mettere lo stinco precedentemente aromatizzato con sale, pepe e rosmarino e lasciarlo rosolare con dell'olio di semi, bagnando con una spruzzata di vino bianco Aggiungere lo stinco al fondo di cipolle, carote e sedano precedentemente rosolate. Infornare il tutto a temperatura di 180°-200° per un'ora e ½ circa. Di tanto in tanto bagnare il tutto con del brodo di carne, mescolando in modo che non si attacchi. A cottura ultimata levare lo stinco dal fondo di cottura.

Per preparare il sugo di carne
Mettere il fondo di cottura sopra la fiamma e lasciarlo tirare aggiungendo del brodo e mescolando con una frusta fino ad ottenere la densità giusta. Passare il tutto con l'apposito colino e aggiustare il sapore.
