Ricetta del soufflè ai porcini freschi

  • 450 gr di porcini
  • 2 scalogni
  • 3 cucchiai di olio extra vergine d'oliva
  • 3 uova
  • 150 gr di besciamella
  • Sale


Pulire i porcini dall'eventuale terriccio, lavarli e tagliarli a dadini. Tagliare gli scalogni e farli appassire in olio extravergine d'oliva ed aggiungere i porcini, salare e cuocere per circa 15 minuti a fuoco medio. Unire i funghi alla besciamella ed ai tuorli e frullare il tutto.Aggiungere le chiare montate a neve e riempire 6 stampini prima imburrati ed infarinati. Infornare in una teglia con dell'acqua. Cuocere quindi a bagnomaria, per circa 30/40 minuti a 180°C.
