Ricetta del semifreddo al cioccolato con salsa alla vaniglia

  • 60 gr di noci
  • 4 uova
  • 125 gr di zucchero
  • 300 gr di panna da montare
  • 1 bustina di vaniglia
  • 10 dl di latte
  • 60 gr di cioccolato bianco


Scaldare 60 gr di zucchero fino a caramellarlo. Unire le noci tritate grossolanamente e tenere pochi minuti sul fuoco. Stendere il composto su un grosso piatto da portata e far raffreddare. Da freddo, tritare finemente il croccante alle noci. In una ciotola a bagnomaria mettere i tuorli d'uovo e 40 gr di zucchero. Sciogliere a bagnomaria il cioccolato e unirlo al composto, far freddare. Quindi, aggiungere il croccante tritato e la panna montata. Versare in stampini monoporzione e mettere nel congelatore per almeno 2 ore. Per la salsa mettere a bollire il latte con lo zucchero rimasto, profumare con la vaniglia e lasciar riposare. Aggiungere un tuorlo d'uovo e cuocere fino ad addensamento. Servire le formine di semifreddo sopra un letto di salsa alla vaniglia.
