Ricetta del castrato alla contadina

  • Carne di castrato (spalla)
  • 2 kg. di patate
  • 2 cipolle
  • 1 mazzetto di erbe aromatiche con aglio
  • 150 gr. di olio
  • 1 lt di vino rosso (St. Maddalena)
  • Sale
  • Pepe appena macinato


Tagliare la carne a grossi pezzi, di circa 300 gr. l'uno, aromatizzare, spolverare di farina, farli rosolare nell'olio bollente, metterli in una casseruola capace, aggiungere la cipolla tagliata a listarelle ed imbiondita, il mazzetto di erbe aromatiche composto di rosmarino, salvia, alloro ed aglio. Mettere il tutto sul fuoco, annaffiare con vino e far cuocere un'ora circa a recipiente coperto. Se necessario aggiungere un po' di brodo di carne. Unire le patate già tagliate e rosolate nell'olio, continuare dolcemente la cottura. Servire ben caldo dallo stesso recipiente di cottura.
