Ricetta dell'antipasto di Lattari

  • Lactarius deliciosus o Lactarius vinosus
  • Parmigiano grattugiato: 40 gr
  • Olio
  • Sale
  • Aglio
  • Prezzemolo


Pulire i funghi e metterli capovolti in una pirofila unta con abbondante olio di oliva. Tritare una manciata di prezzemolo con uno spicchio di aglio ed unire il parmigiano grattugiato. Salare e pepare i cappelli dei funghi, cospargerli con il trito e con un filo di olio. Mettere a cuocere in forno ben caldo per circa 30 minuti. Servire ben caldi, accompagnati da "vinuzzu bonu" rosato.
