Preparare la pasta all'uovo, aggiungendo all'impasto alcuni mirtilli rossi freschi. Ricavarne i capellini, sbollentarli in acqua bollente salata e scolarli. In padella far saltare le chele e la polpa dell'astice tagliata a dadini, aggiungere olio d'oliva extra vergine, aglio, lauro, timo, erba cipollina e zafferano sciolto in un cucchiaio di brodo. Quando il condimento è abbastanza insaporito, mantecarvi i capellini. Rivestire gli stampini di porcellana imburrati con fette di finferli, riempire con i capellini e metterli in forno a 165° per due minuti. Per la salsa far rosolare per cinque minuti i finferli tagliati a fettine, lo scalogno tritato e una bustina di zafferano. Aggiungere il brodo, frullare e passare a chinois. Versare un cucchiaino di salsa sul piatto di portata. Girarvi il tortino. Completare il piatto con mirtilli freschi e decorare con ciuffi di menta fresca.
